1 punnet of strawberries washed & dried

230g granulated sugar

 1 tsp Lemon juice freshly squeezed


1. Put the strawberries in a large saucepan and crush with a potato masher

2.Add the sugar and lemon juice

3. Heat gently, stirring with a wooden spoon until all the sugar has dissolved

4. Increase heat and bring to a rolling boil for five minutes, stirring occasionally

5. To test, plop a drop on a chilled plate and place in the fridge for 30 seconds, run your finger through it and if it forms a crinkle and is tacky then it’s ready, if not boil for another minute and retest until you're happy.

6. With a spoon, get rid of any of the skum from the top.

7. Ladle into a small sterilised jar and seal with lid.
